Tips from carnivores who live here.

Beef heart steaks

Heart costs far less than steak and is dense in nutrients. Grind 1–2 kg, shape steaks, freeze in 250–300 g portions.

Kidney

Cheap. Soak in vinegar water for a few hours to remove the strong taste.

Bone broth

Buy beef feet or leg bones. Ask the butcher to break them so the marrow comes out. The broth sets thick.

Lean local beef

Slice thin, or tenderize with unripe papaya. Buy fat on the side and cook it with the meat.

Raw meat

Raw meat here carries risk. One local soaks heart tartare in vinegar or baking-soda water first.

Beef or buffalo?

Some locals suspect frozen Indian buffalo is sold as local beef. Buy from a seller who kills fresh daily.

Searing without coatings

Use cast iron or thick stainless. Heat it hot, sear, then finish with butter or tallow.
